Remember that time you strolled the medieval town in the south of France. Upon cobblestones you strode confidenetly, exciotedly even to the coner cafe, out of the sun Garçon pace upon your red check clothed table a caraffe of something magical with a side of cheese and a terrine... éh vióla the fascination begins and before you know it a legend is formed and we have the first of two great French cult wines
Of course its five stars, didn't you get the memo. This is a knock out 40+ years of humanity in adoration of this special one
The unique shape of the Castelmère bottle predates the widespread use of labels when bottle makers would craft a unique shape to denote a particular winery. Times have changed, and the iconic bottle has been retired, however, its history is always fondly remembered.
Bright red strawberries, raspberries and red currants dominate the flavours and aromas while light tannins melt away on the palate.
A careful assembly of Grenache, Syrah and Mourvedre grapes, this wine delights with light tannins, an abundance of fruit and a soft finish. Served at cellar temperature during most of the year it can be slightly chilled to accommodate warmer months. Reminiscent of bright red summer berries both in its flavours and bouquet, the Castelmère with tannins that seem to melt away is a welcome match to tomato based pastas, pizzas, soft cheese and grilled white meats.
Not everyone wants a room temperature red, some of us seek that cool refreshing sensation. The Parliament of Owls is wonderful serviced slightly chilled. 20-30 Minutes in the fridge is enough to bring this wine down to about 9 - 11C.
